We've been creating comfort with cookies since 1992. Chocolate-Chocolate Cherry is the new cookie on the block. And just like the new kid on the block you might be shy around this one. Maybe you're sizing it up, since most of the other cookie mixes from Penny's Pastries are the kind of cookies we remember from our childhood. But if you take a closer look (like making and baking the cookies) you're going to be happy you gave this one a chance. Dark chocolate chips, white chocolate chips and wonderful dried sweet cherries all in a delicious cookie base rich with brown sugar and toasted nut meal. It's the newest mix from Penny's. And new can be a good thing.

Jazzy Ice Cream Sandwiches. Bake cookies according to package directions. Once the cookies have cooled slip them into a plastic freezer bag and pop them in the freezer until the cookies are frozen. Take your favorite ice cream flavor from the freezer and let it soften (anything chocolate would be great.) Once the cookies are frozen take them from the freezer and put on a parchment paper-lined cookie sheet, turning one right-side up and the other right-side down (the bottom of our sandwich.) Put a generous scoop of ice cream on the bottom cookie and top with the other cookie to create the sandwich. With equal pressure applied to both cookies, press the sandwich so the ice cream oozes to the edge of the cookies. Feel free to roll the edges of the sandwich in mini chocolate chips, crushed nuts or jimmies. Put the tray into the freezer until the ice cream hardens.

Ingredients: enriched bleached wheat flour, granulated sugar, brown sugar, semi-sweet chocolate chips (sugar, chocolate liquor, cocoa butter, soy lecithin, vanilla bean), white chocolate chips (cocoa butter, milk solids, sugar, vanilla), dried sweet cherries, pecan meal, baking soda, salt

Net weight: 17 ounces

Finished cookie yield: 28 (2 1/2 ” cookies)
