Jazzy Ice Cream Sandwiches. Bake cookies according to package directions. Once the cookies have
cooled slip them into a plastic freezer bag and pop them in the freezer until the
cookies are frozen. Take your favorite ice cream flavor from the freezer and let it
soften (anything chocolate would be great.) Once the cookies are frozen take them from the freezer and put on a parchment paper-lined cookie sheet, turning
one right-side up and the other right-side down (the bottom of our sandwich.) Put
a generous scoop of ice cream on the bottom cookie and top with the other
cookie to create the sandwich. With equal pressure applied to both cookies, press the sandwich so the ice cream oozes to the edge of the cookies. Feel free
to roll the edges of the sandwich in mini chocolate chips, crushed nuts or
jimmies. Put the tray into the freezer until the ice cream hardens.
